Vegan burgers, absolutely perfect for autumn! The mix of hummus and smokey barbecue sauce might sound like a weird idea, but I promise you it is absolutely delicious!
Ingredients for 4 burgers
Whole grain muffins of burger buns
4 mushrooms (boletus)
one carrot
one shallot
Hummus
a pinch of lemon zest
a pinch of garlic powder
a pinch of paprika
smokey barbecue sauce
fresh thyme
In a bowl, combine the hummus, lemon zest, paprika and garlic powder.
Cut long, thin strips of carrot.
Mince the shallot and the mushrooms. Heat neutral oil in a pan and sauté the
shallots and mushrooms until nicely browned.
Toast the muffin buns in a toaster and cut in half.
Spread the hummus on one side, and the barbecue sauce on the other.
Place the carrot strips, mushroom and a few fresh thyme leaves on top, and
cover with the half bun.
